"It's our very own local, palatable bread!" explains Kayode as he walks into the dark bakery on Lagos Island. Agege bread is instantly recognisable by it's 'brick-like' shape and the inside of the bakery is piled high with the loafs of the freshly baked bread. The name comes from the area of Lagos state called "Agege" where it was originally made. "The major ingredient is flour," explains Taiwo, the manager of this particular bakery. "And along the line we use salt, sugar and EDC... EDC is like a flour improver, makes it to rise like yeast." To feed Lagos's 18 million people the bread is made on an almost industrial scale with "mixing machine... and after that the baker packs the flour into the milling machine... and then you size the bread." The whole process takes five hours. Agege bread is sized according to price from 250 Naira ($.150) to even as small as 60 Naira bread ($0.40).
